Thank goodness for the Bella Band. At least if I can't zip up or button my pants at all (as bluntly noted by my husband), I can hide it with that lovely stretchy band (pictured below). Isn't it sneaky? I'm in love.

In other news, here are some fun baby-related items that I'm in love with.

1. Plush, stuffed vegetables from Ikea. I loved them. I couldn't rationalize buying one, but they're just so fun! I did buy the matching swaddling blankets that have assorted vegetables on them. I am convinced that I'm going to turn our kid into a foodie.
2. Baller baby booties by Nike. These I did end up buying. Chad and I saw them while we were looking at some baby furniture. When we got home, Chad was really sad that we didn't get them. This is the first baby-related item Chad has really really wanted for our little stud... so, of course, I had to go back and get them. They're adorable.
We're almost to 20 weeks... February is just around the corner!

Cinnamon Pull-Apart Bread

One of Chad's favorite treats of all time is cinnamon rolls. When I found a recipe for a bread that was advertised as, "the inside of a cinnamon roll in every bite", I knew I had to try it. It was kind of fun, the bread pretty much exploded in the oven and took on quite the interesting waveform.

Ingredients:

For the dough:

2¾ cups all-purpose flour, plus more as needed

¼ cup granulated sugar

2¼ tsp. instant yeast

½ tsp. salt

4 tbsp. unsalted butter

1/3 cup whole milk

¼ cup water

1 tsp. vanilla extract

2 large eggs

For the filling:

4 tbsp. unsalted butter

1 cup sugar

2 tsp. ground cinnamon

½ tsp. freshly grated nutmeg

Directions:

To make the dough, combine the flour, sugar, yeast and salt in the bowl of a mixer fitted with a dough hook. Combine the butter and milk in a small saucepan and heat just until the butter is melted. Set aside and let cool briefly, until the mixture registers 115-125˚ F on an instant-read thermometer. Add the milk mixture, water, vanilla and eggs to the mixer bowl. Mix on low speed until a cohesive dough forms. Continue to knead until smooth and elastic, adding additional flour as needed 1 tablespoon at a time until the dough clears the sides of the bowl and is tacky but not sticky. Knead about 3-5 minutes. Transfer the dough to a lightly oiled bowl, turning once to coat, and cover. Let rise in a warm place until doubled in bulk, about 1 hour. (After the dough has doubled, it can be wrapped in plastic wrap and refrigerated overnight. Let stand at room temperature 30 minutes before proceeding.)

While the dough rises, add the butter to a small saucepan and melt until browned. Set aside. Combine the sugar, cinnamon and nutmeg in a small bowl and mix well.

Transfer the dough to a lightly floured work surface and gently deflate. Roll into a ball, cover with a clean towel and let rest for 5 minutes. Roll the dough out into an approximately 12 x 20-inch rectangle. Brush the dough with the browned butter. Sprinkle the cinnamon-sugar mixture over the dough in an even layer. (Yes, really, use all of it.)

Lightly grease a 9 x 5-inch loaf pan. Slice the dough vertically into 6 even strips. Stack the strips on top of each other and again cut again into 6 equal slices. Stack all the squares on top of each other and set into the prepared loaf pan. Cover loosely with a kitchen towel and let rise in a warm place, 30-45 minutes.

Preheat the oven to 350˚ F. Transfer the loaf to the oven and bake 30-35 minutes, until the top is golden brown. (If the top seems to be browning too quickly, cover loosely with foil at the end of baking.) Remove from the oven and let rest in the pan 20-30 minutes. Run a knife around the edges of the pan to loosen and carefully turn the loaf out, transferring to a serving plate. Serve warm.

My cousin got married!

My cousin Arah got married to the lovely Amberly Hansen last week so of course I have to post some pictures of the wedding! It was great to spend time with my grandparents, my aunt Julie, and my mom who came up for the wedding.
I am now related by marriage to these adorable little boys. I may or may not have fallen in love with these 3 brothers. Now that we know we're having a boy just a couple of months from now, I have pretty much fallen in love with all things boy.

The wedding reception was held at Noah's in South Jordan and it was beautiful!

17 weeks

There they are, belly pictures. 17 weeks and finally starting to look like I'm pregnant! Here are a few things about my pregnancy right now.
  • I don't feel sick at all anymore! Best feeling ever! ...and just in time for my new job. Although I still get tired and zonk out at the end of the day, the lack of sickness makes me feel like I am myself again.
  • I haven't been able to feel baby boy yet and I'm dying to be able to actually feel that he's there. I know it will be in the next couple of weeks, but I can't wait!
  • We have a 20 week ultrasound on October 6th- even though we just had an ultrasound, I'm so excited to see him again! This time, we get the more in-depth evaluation of where he's at right now.
  • I don't think my appetite has really changed all that much. Although I eat more frequently throughout the day, it really has just consisted of adding a few more snacks... a banana before lunch and a fiber one bar in the afternoon. I guess the biggest change is that sweets have no appeal to me AT ALL. Not so much a bad thing. I do seem to gravitate more towards salty snacks like chips and Cheetos. I have never loved Cheetos so much before.
  • I really don't think that being pregnant has made me super emotional or unreasonable. I promise Chad can testify to that effect. Thank goodness I'm still me!
  • Baby boy doesn't have a name yet. We've got a list of about 10 names that we're throwing around, but there's not one that we absolutely love yet. I think we'll need to wait and see him before we settle on one.
  • I feel huge! Even though I don't have much belly yet, I feel bigger than I've ever felt before. I know that it's all a part of being pregnant, but it's so counter intuitive to everything I've ever known about my weight. Just one of those psychological mind games to get past.
We love this baby boy so much already, I can't believe how fast time has flown so far. February still kind of seems far away, but I know he'll be here before we know it and our lives will never be the same!

It's a...

BOY!!!
That's right, we caved and paid the extra to get the early gender check ultrasound... and consequently got to met our little man for the first time.

There's a chance we may or may not have started to accumulate a few things for this little man of ours. I just can't help it! It's so fun to imagine having a baby boy small enough to fit into all these fun clothes! To celebrate after our ultrasound, we made a quick stop at Target to purchase a few token things. It was quite the celebration!
The next day, I made some 'boy cookies' for Chad to take to work and for me to take to my old job to break the news. What says BOY more than planes, trains, cars, and dinosaurs!

Overabundance of Tomatoes

For those of you who don't know, we have an old man who lives in our basement. His name is Roger. One of his summertime hobbies happens to be gardening and he always has a plethora of vegetables around harvest time. Besides being a gardener, he's also the nicest little old man around. Last week, he gave us approximately 40 or so tomatoes just for the heck of it. Since then, we've been trying to get creative in how to incorporate tomatoes as often as possible in our menu. One of our favorites was this simple, caprese salad. Who knew it was so easy, yet delicious?
Caprese Salad
The Pioneer Woman

  • 2 cups Balsamic Vinegar
  • 3 whole Ripe Tomatoes, Sliced Thick
  • 12 ounces, weight Mozzarella Cheese, Sliced Thick
  • Fresh Basil Leaves
  • Olive Oil, For Drizzling
  • Kosher Salt And Freshly Ground Black Pepper

Preparation Instructions

In a small saucepan, bring balsamic vinegar to a boil over medium-low heat. Cook for 10 to 20 minutes, or until balsamic has reduced to a thicker glaze. Remove from heat and transfer to a bowl or cruet. Allow to cool.

When you're ready to serve, arrange tomato and mozzarella slices on a platter. Arrange basil leaves between the slices. Drizzle olive oil over the top of the salad, getting a little bit on each slice. Do the same with the balsamic reduction, making designs if you want. Store extra balsamic reduction in fridge for a later use.

End with a sprinkling of kosher salt and black pepper. Serve as a lunch, with crusty bread. Or serve alongside a beef main course for dinner.It was quite tasty and we would highly recommend it!

15 1/2 weeks and a poll!

As of today, I'm officially 16 weeks although this picture was from last week. I'm absolutely loving this whole, "not being sick anymore" thing. I finally feel like me again. I've got energy again and don't spend all night laying on the couch curled up in a ball. The other fun thing is that I'm actually starting to show just a little bit and I'm not the only one who can tell! In the words of Jacie, the last couple of weeks have been the, 'you either look like you could be pregnant or have just eaten a big lunch' stage.

While my family was in town, we went shopping and I stocked up on some stretchy, flowy skirts which have been comfortable to wear pretty much everyday. That is, when I'm not wearing scrubs.

We're planning on getting an ultrasound in 2 weeks to find out the gender and I could not be more excited! I've added a poll to see what people's guesses are so far... I think it's a girl, but both Chad and my mom are convinced it's a boy. We'll just have to wait and see!
